Our Story

Chef Thierry Marceaux grew up in his parents' bakery in the small village of Isola nestled in the Alps in the south of France. Not wanting to follow precisely in his fathers footsteps, he went to culinary school to learn cuisine and pastry with a teenage dream of living as a ski instructor during the season and making cakes, tarts, and macaroons in the summer. But soon he made his way to the United States and for 20 years he made pastries in world class hotels from Texas to Louisiana and South Carolina. At the pinnacle of his career in 2004, he became executive pastry chef to the fames Roosevelt Hotel in the French quarter of New Orleans. Then Hurricane Katrina hit the city and the hotel was nearly destroyed. Thierry escaped with his young family first to Dallas until a friend invited him to Las Cruces. Founded in 2008, Le Rendez-Vous is the culmination of Thierry's dream of owning a café where we could marry his mother's French County-style recipes with Louisiana flare and his own artful pastries.
